Ingredients
65gflour
150mlwater
50gbutter
pinch of salt
2eggs
To decorate:
whipped cream
50gchocolatemelted
Instructions
Preheat an oven to 200°C and grease a flat baking tray.
Place water and butter into a saucepan over a low heat until it melts. Bring to a brisk boil.
Reduce heat and add sieved flour and salt. Stir briskly until mixture forms a soft dough and leaves sides of saucepan. Remove from heat and allow to cool.
Add the eggs gradually and beat until mixture is smooth and shiny. If you don`t have a piping bag, just spoon mixture onto tray.
Bake for 20 minutes approx, until well risen and golden brown in colour.
Remove from oven and slit along one side. Cool on wire tray. When cold, fill with whipped cream and spread with chocolate on top.
Notes
Eclairs are best eaten the day they are made but they keep quite well in the refrigerator overnight.
